Guilt Free Taco Salad by quornflour

The word salad makes you think you are eating something super healthy, but so many of the salads you could make or eat and not really salads. Not to say they aren’t delicious, but sometimes what you want is something that you can really enjoy that isn’t just a mouth full of grass.

So on Thursday nights, is Big Brother night, you know the live show. I freaking love that show. My friend Angie and I get together and make dinner and watch. The dinners run the gamut from take-out Thai to Kraft Mac & Cheese with Spicy Spam to giant salads.

Last night we decided that we would go for something a little on the lighter side, it’s been hot out here and so many veggies are in season a salad was the main focus. It takes a little prep but part of it you can do way in advance.

Here is what you need:

2 Chicken breasts cooked in taco seasonings* and sliced into bite sized pieces

7 oz bag of 50/50 lettuce – spinach greens

½ an avocado chopped into bite sized pieces

1 jalapeno pepper finely chopped

1 Italian pepper chopped

1 limes yield of juice

2 finely chopped cloves of garlic

1 teaspoon of extra virgin olive oil

3 small tomatoes chopped

¼ teaspoon of Kosher or sea salt

4-6 crushed tortilla chips

In a large bowl toss everything except the chips and enjoy. It makes 2-4 servings depending on what you are having with it and how hungry you are. Top with crushed chips for a little crunch.

*to cook the chicken I use Hot Taco seasoning and cook about 8 breasts per packet by cutting the chicken into bite sized pieces and essentially making the seasoning into a thick liquid and cooking it down until the chicken is cooked through. I store this in the fridge so I have it to toss into salads.
