I just wanted to share with you my super delicious sandwich that I brought to work with me today for lunch.

I like it because in addition to being delicious the brie cheese is a nice substitute for a condiment spread. You could probably use skinny cow too and that would be full of yum.

Here is what’s in it:

2 slices of honey oat bread

2 slices of dry pepper salami

1 oz finely sliced brie cheese (slice it when it is cold)

¼ thinly sliced green apple

1 cup raw spinach

Sprinkle of black pepper (sticks best if you put it on the cheese)

According to DailyBurn this sandwich is 400 calories and packed with vitamin K. Here is what they gave me for nutritional information if you are interested: check it here.

If you have not been paying attention, I should probably let you know. It has been hot. The whole country has been covered in “red”, well the whole country except Seattle (screen shot from Intellicast, my favorite weather website).

While I still prefer fans and open windows, after last summer: I even went so far as to pick up an AC to cool and dehumidify the house when it gets too bad. I am glad I did.

That said it is still hard to find ways to cool off. Sometimes a drink with friends is an awesome way to socialize and hang out. One of my favorite summertime drinks is the passion lemonade from Starbucks. This is by the way super easy to make on your own. All you need is 1 part iced passion tea and 1 part lemonade.

Now if you are looking for a cocktail this is a great drink to grow up a little. To do this: make your own Passion Lemonade:

start by brewing a half gallon of TAZO Passion tea (about 6 tea bags)

add honey or other sweetener while it is still warn to help it dissolve

sweeten to taste and then a tiny bit sweeter

add the juice of fresh squeezed lemons (about 6)

in a drink shaker (or pitcher) add:

4 parts tea lemon mix

1 part Limoncello

2 parts vodka

Serve over ice or in a martini glass, if you want to get super fancy you can sugar the rim.

Sit back and enjoy responsibly.

Well I did it and a good thing too seeing as my dad surprisingly surprised me with a worry free ticket to Austin for the baby shower… next weekend. J

Sometimes you have to wonder where people just keep coming up with new combinations of fabric and new ways of putting that fabric together.

For this one.. I am calling it “Riding the Rails of the Baby Train”. Why.. because I was inspired by a quilting magazine to create a rails pattern and then well.. because Ozzy said at one point that he was riding on the rails of the Crazy Train… babies are crazy… bada bing bada boom: Quilt name.

Here are a few snapshots of the process. Please email me if you want to know more even if it’s just some small detail.

Planning to do a little needlepoint to insert my name on the Handmade by tag… don’t worry, I haven’t forgotten. J
