Tomato Tuna Melt by quornflour

Tuna is one of those things I almost always have on hand. It is easy to throw together a quick dinner or lunch in a pinch.

One of my favorites is a tuna melt, trouble is the bread really has to be perfect to make it good. Or heck, you could also just skip the bread all together!

For this quick easy dinner all you need is:

  • 1 can of tuna drain some of the water, but not all
  • 1 tablespoon of mayo
  • 2 tablespoons dill relish
  • 1 tablespoon dried onion
  • Fresh ground black pepper & salt to taste
  • 4-6 Roma tomatoes
  • ¼ C shredded cheddar cheese
  • Mixed greens

Cut the tomatoes in half, hollow out into a bowl. Add the tuna, mayo, relish, onion, salt and pepper to the tomato guts. Mix together.

Stuff tuna mix into tomatoes, line up on a tray or a mini-muffin tin, sprinkle with cheese and put in a broiler just long enough for the cheese to melt.

Serve on a bed of mixed greens.
