Tamato Tumato by quornflour

I love tomatoes.

Seriously. Love them.

The only reason I did not grow them this last summer is because I need to suss out a way to grow them on my porch, but my back porch where the sun is better is super-duper windy. This summer I have some ideas, but that will be a later post.

I always have canned stewed tomatoes on hand. They are easy to make tomato sauce, chili or even throw in a can of tomato soup and make it more delicious.

The other night I wanted spaghetti squash, which is just as delicious with tomato sauce as regular spaghetti is. So I threw together this really simple sauce.

Whatever you want to put it on… here is what you need:

  • 1 tablespoon olive oil
  • ½ red onion finely chopped
  • 6-8 cloves of garlic coarsely chopped or smashed
  • 1 tablespoon honey
  • 2 – 28oz cans of stewed diced tomatoes
  • ¼ cup coarsely chopped fresh basil
  • Salt to taste (optional)

In a large pot heat oil on high. Add onions and garlic and start to brown. Turn down the heat to low and add honey. Mix together.

Add tomatoes and basil. Salt to taste if necessary. Serve warm though cold is good too.
